1. Your restaurant/business:
The Angel – Taste of Devon restaurant in the beautiful town of Dartmouth has always been at the forefront of modern British cooking.
2. Describe your kitchen:
Petite and efficient!
3. Favourite Chef Works item and why?
My new Largo bib aprons, they’re lush.
4. First job:
I started as a Kitchen Porter at the Mussel Inn in Down Thomas, UK. I learned to work hard and save money.
5. Favourite cookbook:
Out of My Tree by Chef Daniel Clifford. I love his style of food – I think you could learn a lot from him if you’re just starting out in the industry. I recommend it as it’s a good read and the story of his career.
6. Your awards:
Awarded Michelin Plate 2020, Best Chef at Trencherman’s Awards 2020, two AA Rosettes, Devon Food Hero at the Devon Awards and Gold at The Taste of West Awards.
7. Your cooking inspiration:
For me, it’s the seasons, using the best ingredients the South West has to offer such as Game and the variety of wild mushrooms.
8. Your speciality dish:
A Beetroot Tart with brunoise of red beetroot relish, Poppyseed Curd and Sorrel.
9. Favourite dish to eat:
The Bang Bang Cauliflower at Wagamamas.
10. Weirdest thing you ever ate:
Rice with Bolognese!
11. Favourite ice cream flavour:
Salted Caramel, no particular brand, just love this flavour.
12. Favourite drink:
I do love a latte or a flat white. Something with a strong blend. And I do like a cheeky glass or two of passionfruit Rekorderlig cider…
13. Favourite wine:
Sharpham Sparkling Pink – a crisp and delicate English sparkling wine.
14. Who would you most like to cook for?
Chef Daniel Clifford – I love his food and style.
15. And who would you least like to cook for?
Boris Johnson.
16. Favourite things to do when not cooking:
Eating out is a passion and working on exciting developments for Angel.
17. Your latest project:
A bespoke coffee project at The Angel.
18. Favourite city?
Bath is a beautiful city, I worked there for 7 years. I enjoy the quirky little streets and vintage shops you find. I loved eating at The Pig near bath – rustic food, but so flavoursome. There are some really cool coffee places, I could spend all day in there! My favourite was Society Cafe.
19. Your greatest indulgence?
Chocolate – the new Salted Caramel Lindt is amazing!
20. And finally, your all-time best culinary tip?
Take inspiration from great chefs like Hywel Jones, Richard Davies, Chris and James Tanner. They have mentored me throughout my career, teaching me how to be consistent, refined and the how to be the chef i am today.
