Our Barista of the Month for November features Tom Pater from the Mill Kitchen. It’s a great family-owned and managed café, run out of a beautiful converted mill in Farsley. The décor is rustic which absolutely compliments its broad food offering in relaxed surroundings.

The coffee is excellent and the baking, some might say, even better! As joint owner/Head Barista, Tom takes great care to use the best ingredients which are locally sourced, where possible, for an ever-evolving menu. There’s a great balance between healthy and indulgent options.

1. Your coffee shop/café:

Is the Mill Kitchen in the town of Farsley in West Yorkshire, UK.

2. Describe your location/interior:

Mill Kitchen has the rustic and industrial interior of an old mill with exposed brickwork and beams with vintage and reclaimed furniture. A great place to work or relax.

3. Favourite Chef Works item and why:

The Memphis Bib Apron in Indigo Blue denim (AB035). It’s stylish, practical and comfortable!

4. First job:

As a boy, I worked on Saturdays at Kendal Museum in the Lake District, UK.

5. Your favourite coffee beans/machine:

The Docks Espresso Blend from North Star Roasters (www.northstarroast.com) as well as their single origin bean. Machine has to be our beautiful and sleek La Marzocco Linea PB!

6. Your awards/achievements:

Apart from running our own successful business and my children, I’d have to say appearing on this Chef Works Blog …

7. Why did you become a Barista?

To serve the best possible coffee in our cafe.

8. Your speciality coffee:

I love a Flat White.

9. Favourite dish to eat with a coffee:

I’d have to say the Mill Kitchen Raspberry & White Chocolate Brownie of course!

10. Weirdest thing you ever tasted:

Um. Baby sick?

11. Favourite ice cream flavour (other than coffee!):

Northern Bloc’s Black Treacle is delicious (northern-bloc.com), we have a few flavours at the Mill.

12. Favourite coffee topping:

None required.

13. Favourite wine:

I almost always choose a Rioja.

14. Who would you most like to make coffee for:

I love tennis, so it would have to be Roger Federer – he’s the GOAT (greatest of all time)!!

15. Who would you least like to make coffee for:

Donald Trump …

16. Favourite things to do when not making coffee:

Tennis, time with the kids, eating out.

17. Your latest project:

I’m between projects right now!

18. Favourite city and why:

San Francisco – it’s a sunny and super cool city.

19. Your greatest indulgence:

Food and drink in general.

20. Your all time best barista tip:

The milk tastes bitter over 65 degrees c, so don’t over-steam!
